Water-pepper, water pepper or marshpepper knotweed is a plant of the family Polygonaceae. It grows in damp places and shallow water. It is a widespread plant, found in Australia, New Zealand, temperate Asia, Europe, and North America.
Water Pepper grows wild in Europe but is rarely used as a cultivated spice outside of Japan, where the fresh leaves are used primarily for seasoning.

Cultivation: Benitade seed has a weak and slow germination. It is important that the seed is kept moist until it has germinated. Soak seeds in water for 24 hours. Then wrap the seeds in cloth and pre-chill refrigerate between 0C and 10C (32°F-50°F, 41°F is best) for at least 7 days.

Growing temperatures 50-60°F should be adequate to develop “anthocyan” after the seeds have germinated. We cannot tell exactly how long exposure should be under low temperatures.
