You can use 'Rat's Tail' radish any way you'd use round, red radishes. They're also nice tossed into stir-fries, stews or any cooked dish that could use a little kick. They lose some of their pungency when cooked, but remain crunchy. The pods are also great pickled.

While most radishes are harvested as edible root vegetables, the unique rat-tail radish is grown for its crispy and mildly peppery flavored pods that grow off the stem of the plant. The mature and ready to eat pods look just like a green or purple rat’s tail, which is how they got that funny name.

Rat-tail radishes have been a staple for many gardeners throughout time. They are indigenous to Southern portions of Asia, and they are a versatile plant. Their adaptability has allowed them to be enjoyed in regions from the tropics all the way up to some rather chilly locations in the North.

Native to South Asia. Grown for the crisp, pungent, edible seedpods (up to 6 inches long) and not for the roots. Pods should be gathered before fully mature and eaten raw, pickled, or chopped in salads. 50 days.
Instructions - Sow seeds outdoors as soon as soil can be worked in spring. Plant in full sun. Successive plantings can be made every 3-4 weeks throughout summer and fall to provide a continual harvest.

Rat-Tailed Unique, “aerial” (above ground) radish variety that originated in Southern Asia. This radish is NOT grown for its root crop. Its cuisine claim to fame is the edible seed pods that are crispy, succulent, and have a mild radish flavor. Pods will grow up to 6” long but are best harvested sooner. Use in salads, stir-fries, curries, or fresh “snackers”. The 3-4' tall plants bloom extensively, even in high heat, and produce up to 50 “tails” each. Heirloom (Open Pollinated)
Believe it or not, rat-tail radishes are not used explicitly in large, bubbling, black cauldrons by evil-doers who are looking to cast a spell. In spite of their rather unfortunate name, they are quite a lovely vegetable plant.

Sow seeds for this hardy annual at a depth of ¼ to ½ inch deep 2 weeks after the last frost. Thin them to a foot apart and eat the thinnings! Toss them in a salad; they are delish. Pods will appear between 40-50 days, with the lowest ones ripening first. Pick them when small, about pencil thick, when they are at their most pungent and crisp.
