Also known as Chinese spinach or Jamaican Callaloo, Amaranth is a visually appealing plant that adds a vibrant touch to any garden with its range of colors from light yellow green to dark green and red. With its high protein, iron, and calcium content, as well as vitamins A and C, Amaranth leaves and stems are a nutritious choice for stir-fries and steamed dishes. In Chinese cuisine, the red-leaf varieties are often used and can be added to soups or served on their own. In India, Taiwan, and Japan, the lighter varieties are preferred. In Western cuisine, Amaranth is a great substitute for spinach in any recipe. The young leaves are especially delicious in salads.
