An old-time favorite, Night-scented, sometimes called 'Evening-scented' Stock is one of the easiest and rewarding scented plants to grow.
The plants are fairly low in stature, growing 45 to 60cm (18 to 24in) tall and wide with small pale lilac to white flowers. While not the showiest of plants, it is well worth adding to the garden for the wonderful evening fragrance.

The flowers open in the late afternoon to evening and emit a most delightful fragrance. The scent has been compared to vanilla, rose, spice and even cloves however one thing is certain, once you experience it in your own garden it will become a summer fragrance you will never want to be without.
DETAILS
A member of the mustard family, Matthiola Longipetala -- also called night stock or evening-scented stock -- is an annual plant that produces highly fragrant blooms that open during the evening hours. Planting this stunning flower will provide a unique addition to your garden or growing in a decorative pot on your patio. Like other annuals, night stock requires proper planting, care and maintenance to ensure the life of the plant.
Hardiness
Since night stock is grown as an annual and will die off in the cold months, hardiness zones are not as important as if you were growing a perennial. However, night stock can grow in U.S. Department of Agriculture plant hardiness zones 2 through 10 and will reach heights between 18 to 24 inches. According to the USDA, night stock grows in various states from California to Michigan and has even been found in Alberta, Canada.
Planting and Location
The seeds of the night stock can be sowed directly in the flowerbed where you want them to grow or you can germinate them indoors. Typically, the seeds will germinate within 7 to 14 days after planting and requires a temperature of about 70 degrees. If planting the seeds directly in the ground, wait until the weather is warm and choose a location where the annuals will receive ample sunlight with fertile soil that features good drainage. If the soil is poor, amend it with a few inches of organic compost, which will add nutrients to the soil while improving its drainage. Plant the seeds about 1/4 inch deep in the amended soil keeping them 12 inches apart. Water the soil regularly when it begins to dry but do not let the soil become soggy.
Care and Maintenance
To encourage more blooms, remove the spent deadheads once the flowers have faded. Do not merely toss the spent blooms on the ground and instead compost them or discard in a trash bag. Night stock flowers can be harvested for use in cut floral arrangements when they are open about half way. Typically, these blooms last for about 8 days in water and require recutting the stems at an angle while holding the end of the stem underwater. Consider adding fertilizer -- such as well- composted mulch or an all-purpose fertilizer designed for annuals -- to the night stock. These fertilizers will add much need nutrients to the soil.9b
About Evening Scented Stock: Originally from the countries of Portugal and Spain, this wildflower is one of a favorite garden variety known as “stock,” usually cultivated for their strong, perfumed scent. In medieval England, flowers such as this were known as “gillyflowers.” This particular flower looks wilted during the day, but begins to bloom and produce its fragrance in the evening and through the night. The genus name Matthiola honors a 16th century botanist named Pietro Andrea Mattioli, who identified many plants for medicine and science.
Evening Scented Stock Germination: Sow seeds as soon as the soil can be worked in the spring. Planting just below the surface of the soil and keep moist until germination, which usually occurs within 10-15 days at 60-65 degrees F. For continuous blooming, plant a new crop every 4 weeks. In mild climates, sow in late fall for early spring blooms.
Growing Evening Scented Stock Seeds: Water seedlings occasionally until they become established. Though mature plants prefer fairly dry soil, water them occasionally to prevent the soil from entirely drying out. Remove wilted blossoms for new growth. Though the blossoms remain closed during the day, they open at the end of the day and produce a lovely fragrance all night long. These flowers actually produce a stronger scent when grown without much fertilization or watering.
Harvesting Evening Scented Stock: For cut flowers, choose stems with flowers that have just opened. Strip the foliage that will fall below the water level, and place in water immediately.
Saving Evening Scented Stock Seeds: After the flowers fade, these plants produce long, thin pods. Watch the pods carefully, removing them from the plant when they turn from green to yellow. If left to ripen to brown, they will split and release their seeds. Spread out the pods in a dry location, keeping them loosely covered to contain the seeds that will be released as the pods dry. Separate the seeds from the pods and store the seeds in a cool, dry place.
