This pak choi forms a flat rosette close to the ground with tender, dark green, spoon-shaped leaves, and short light green stalks. This very vigorous grower is cold tolerant and has a delicious, mild
mustard flavor. In warm weather, the plant is erect while in cold weather, the plant forms flat rosettes. Tatsoi is popular as a salad green. Plants can be harvested at any stage.

Pak choi are also known as Chinese leaves or cabbage, and they look more like a lettuce than a traditional cabbage.
They have a slight mustard taste and the leaves are crisp and crunchy.
Fast-growers, they can be grown as a baby leaf, a cut and come again salad crop or left to fully mature.
Suitable for container growing.
Harvesting: When to sow outside:
4 to 6 weeks before average last frost, or as soon as soil can be worked. Sow again in late summer for fall crop. In mild climates you can even sow in the fall for early winter harvest.
Almost all parts of the plant at all stages can be used; seedlings, small leaves, large leaves, stems and flowering shoots. The smaller leaves will be enhanced by a touch of light frost. Cut leaves at the base of the stem; since the plant hugs the ground, be sure to wash harvested plant parts carefully.
Comments: Mildly pungent leaves. Cool season crop yet slow to bolting and long standing.
